The noodles are made with alkaline water and have a chewy texture; the wontons have thin skin and full filling, wrapped with fresh shrimp and pork; the soup base is boiled with pork bones and dried fish for a long time, which is fresh and mellow. Recommended shops include Zhusheng Noodle Family and Wu Caiji.
